Vietnamese Fish Stew
Ingredients2 pounds of white fish, chopped
1 tablespoon canola oil 1 onion, halved then sliced thinly 2 tablespoons of finely chopped lemon grass 1 - 2 teaspoons grated fresh ginger 3 - 4 cloves of garlic, crushed 2 - 3 carrots - julienned 1/3 cup of brown sugar 1/4 cup of fish sauce 1 tablespoon of soy sauce 1/3 cup of water Juice of one lime or lemon 1 jalapeno - finely sliced 1 teaspoon cracked black pepper 1/3 cup chopped cilantro |
Method1. Heat wok - add oil, onion, ginger, lemon grass, garlic and stir for 1 - 2 minutes.
2. Add brown sugar and fish sauce and stir well to combine. 3. Add carrots and water if necessary. Stir for 2 - 3 minutes.
4. Add chopped fish and stir gently to combine fish with the sauce and vegetables.

5. Add pepper, lemon or lime juice and cilantro.
6. Serve with fresh white rice preferably cooked in your rice cooker. |
