Beef & Broccoli
IngredientsSambal oelek2 lb beef (seasoned tri tip works well) 4 cups broccoli 1 onion 1 can oriental corn 1 cup roasted cashews (optional Ed) 4 cloves garlic 1 in grated ginger rice vegetable oil lemon grass Marinade 1/2 cup oyster sauce 4 t soy sauce 4 t sesame oil (it's toasted) 2 T cornstarch 1 T brown sugar 1/2 cup water sambal oelek |
Method1. Slice beef thinly (think <1cm) and place in a small bowl.
2. In a separate bowl, combine the marinade ingredients, whisking until combined, and then pour over the beef. Let sit for at least 30 minutes in the fridge. (Alt: just fry the meat with salt and hold the sauce for the final mix of meat and onions.) 3. Heat up oil in the wok and add ginger and minced garlic, letting them fry to absorb the flavor.
4. Cook the beef slices in the wok just long enough to brown on either side, then remove. Don't add all at once - only have as much in the pan as can cook quickly.

5. Cook the broccoli in the microwave, until completely cooked. You won't add these back in until the end.
6. Pour a little more oil in the pan, if necessary. Add the sliced onions, cooking until they begin to brown. (You can also add the garlic and ginger at this point if you prefer.) Add two or three stalks of sliced lemon grass. 7. Add the corn and the cashews into the mix, and another 1/2 cup of water if necessary. Think about the sauce. 7. Finally, add the beef and the broccoli back into the wok (or, place the rice, then broccoli from the microwave, then ladle over the meat). You should not need to cook this for more than a few minutes - everything should be all cooked!
8. Serve over a bowl of rice.
