Spicy Chipotle Rice
Ingredients1 onion, chopped
3 cloves of crushed garlic 2 tablespoons of olive oil 3 cups of white rice - we like jasmine but you can use basmati 2 chipotle chilies and 2 tablespoons of the adobo sauce 3 cups of water salt and pepper to taste Optional extras: 1 jalapeno, finely chopped for even more heat fresh herbs for serving |
Method
1. Heat olive oil, add chopped onion, cook for about 5 minutes. Add garlic and sauté for a minute or two more. Add rice and stir around for about 3-4 minutes. 2. Transfer rice mixture to rice cooker. Add 3 cups of water and the chopped chipotle chilies and adobo sauce, salt and pepper. 3. Cook in rice cooker using your regular method. 4. Serve with your favorite herbs - dill, cilantro, parsley - whatever you have on hand! |
Other Ideas
Try using chicken stock instead of water. Add some tomato paste if you want the rice to be a redder color. |
