Sweet chili sauce, fish sauce, lemon juice and soy sauce makes the best combination for marinating just about anything! This is our favorite standby marinade for chicken and salmon (Jane).
Thai Marinade
Ingredients1/2 cup sweet chili sauce
2 tablespoons fish sauce 1 tablespoon mild oil e.g. canola 2 tablespoons lemon or lime juice 1 tablespoon soy sauce Lemongrass Handful of chopped coriander, Parsley or chives - whatever green stuff you have around Jazz it up with crushed garlic, grated ginger |
Method1. Combine all ingredients.
2. For chicken - pour over and allow to marinade for at least 30 minutes. 3. For salmon - place salmon pieces on aluminum foil - large enough to wrap. Add some julienne carrots, asparagus, or red bell peppers. Add around 3 tablespoons of marinade diluted with a bit of water - about 1 tablespoon. Wrap up and BBQ.

4. Looking for a marinade for pork or beef? Try this one. For beef - cut thinly and then marinate. Then put beef on skewers and then BBQ.
5. Serve with a rice pilaf e.g. chipotle rice and coleslaw or salad. Storage tips: Lemongrass. Chop finely and freeze until needed. Just add a tablespoon or two to your favorite marinade or stir fry. Ginger: peel to remove skin and then put pieces into glass jar. Cover with dry sherry and store in the refrigerator. Will keep for ages. Sherry can be used in stir-fries. |
