Spanish Fish Soup with Orange
Ingredients2 1/2 pounds white fish i.e. cod
5 cups water 4 bitter oranges or 4 sweet oranges and 2 lemons 2 tablespoons olive oil 5 garlic cloves, unpeeled 1 large onion, finely chopped 1 can of diced tomatoes 4 small potatoes, chopped into small cubes 1 teaspoon paprika salt and ground black pepper 1-2 tablespoons finely chopped fresh parsely |
Steps1. Heat the oil over high heat and add in the smashed garlic and onion. Cook until onion is softened.
2. Add in the diced tomatoes, then shortly after add the 5 cups of water and bring to a boil. For extra orange flavor add orange rind to the soup. 3. Next, add the potatoes and cook for about 5 minutes. Then, add the fish pieces and cook for another 15 minutes.
4. Add the squeezed orange juice, the paprika, and salt and pepper to taste. Serve with parsley. |
