This is quick because the chicken is Trader Joe's Tempura Chicken - and we use the sauce that comes
with it as the base for our sweet and sour sauce. A good weekday standby (Peter).

Sweet and Sour Mandarin Chicken
Ingredients1 bag Trader Joe's Tempura Chicken or equivalent (for 2-4 people)
Snow peas - 30 or 40 Carrots - 2 or 3 cut julienne style Onion - sliced thin down the middle 1 cup or so pineapple pieces - fresh or canned 1 inch fresh peeled ginger, grated 2 tablespoons oil 1/2 cup water Spring onions - 8 or 10 Sauce Trader Joe's Tempura chicken sauce 4 or 5 tablespoons sweet chili sauce 3 tablespoons fish sauce 1/3 cup or so dry sherry 1/3 cup or so vinegar |
Method1. Wash rice then set to cook in the rice steamer - about 1/2 cup for each person (with the same volume of water).
2. Preheat oven to 350 or so and set the chicken pieces on parchment paper on an oven tray. Cook for 15 minutes. 3. Heat oil in a wok or large pan then add carrots and cook for 2 or 3 minutes, moving around. Add ginger, cook another minute or so.
4. Add onion segments (not spring onion) as well as snow peas. Tip in the water (most will boil quickly off) and continue to agitate the vegetables until nearly cooked. |
5. Assemble the sauce by combining all ingredients then add enough to the pan not to drown the vegetables.
6. Add the pineapple and the cut spring onions then turn down heat. Take chicken from oven (if still there) and call people to the table. 7. Serve thusly: Rice on the bottom, chicken on the rice bed, sauce and vegetables ladled on top. Eat with chopsticks. |
